Mini Strawberry Chocolate Tarts

Mini Strawberry Chocolate Tarts Made with Curious 68% Single Origin Chocolate on a white ceramic dish and a single tart on a wooden coaster - Malaysia Artisanal Dark Chocolates

INGREDIENTS

9 pieces of mini tart shells (store-bought)

200gms Strawberries

10 grams Whole Hazelnuts

½ tsp Sea Salt

 

For the Chocolate Filling

100g Curious dark chocolate buttons

130g Heavy cream

 

METHOD

For the Chocolate Filling

  • Measure the chocolate buttons in a bowl and set them aside.
  • In a saucepan, warm the heavy cream on medium-high heat. Keep stirring to prevent it from boiling. The cream should be warm and not boiling.
  • Alternatively, you can also use the microwave to warm the cream. In a microwave-safe bowl, add heavy cream and microwave for 1 minute first. Then give it a quick stir and microwave for another 30 seconds.
  • Once warm, add this cream over the chocolate buttons and leave aside for a minute.
  • Using a whisk, mix both chocolate and cream together slowly until everything comes to a smooth consistency. If you still see chocolate lumps that aren’t melting down, microwave the mixture for 20- 30 seconds and then mix well until everything is lump-free.
  • Keep aside to cool down for 5 minutes.

 

Assembly

  • Chop some strawberries into small pieces and slice some for garnishing.
  • Assemble the store-bought tart shells on a tray.
  • Add a thin layer of chopped strawberries to the bottom.
  • Now add the chocolate filling in the tart shells to the top.
  • Place them in the fridge for 30-45 minutes to set.
  • Before serving, garnish with a few slices of strawberries and chopped hazelnuts. Sprinkle some sea salt on top.
